Ingredients
- 4 Deer Sausage (or any sausage)
- 1 Large Baguette (cut in half)
- Cheese (Provolone or Mozzarella)
- 1 Red Onion (Sliced & Caramelized)
- Marinara Tomato Sauce for dipping
- S&P
Chimichurri Sauce
- ½ Cup Fresh Parsley (chopped)
- 1 Small Red Onion (diced)
- 1 Clove Garlic (diced)
- 1tsp Chilly Flakes
- ½ Cup Olive Oil
- 1tbs Red Wine Vinegar
- Juice and Zest from half a Lime
- Salt & Pepper
Directions
- Pre-Heat Grill to Med-low Heat.
- Slice Bread in half & scoop out the inside to create a pocket.
- Lay down a layer of cheese in the bread, followed by some caramelized onions.
- Then top everything with the sausage meat. Slice the casings open or push out with your hands, pressing the meat down firmly.
- Grill bread over medium-low to medium heat, meat side down and lid closed for 10-15min. Be careful the bread doesn’t burn yet the sausage is cooked through. Give it a quarter turn halfway through the cook.
- As bread is grilling, make your chimichurri sauce by dicing up the parsley, onion and garlic, and place it all into a bowl. Add Oil, Red Wine Vinegar, Chili Flakes, the Juice & Zest from half a Lime, Salt & Pepper and mix well.
- When the sausage is done, remove and top with the chimichurri sauce, cut into sections and serve with the warm marinara tomato sauce.
