
Chinese Goose & Broccoli Stir Fry

Ingredients
For Marinating
- 2 Large Goose Breasts (no skin or bone)
- 3 tbsp Water
- 1 tbsp Dry Sherry Wine (Or Mirin or Shaoxing Cooking Rice Red Wine, which is traditional but can be hard to find. I used Dry Sherry Wine)
- 1 tbsp Neutral Oil (Canola, Avocado)
- 2 tbsp Cornstarch
- ¼ tsp Baking Soda
- ½ tsp Kosher Salt
- ½ tsp Black Pepper
For Stir Fry Sauce
- ½ cup Soy Sauce (light sodium)
- ½ cup Water (+ 2 Cups)
- 3 tbsp White Sugar
- 2 tbsp Cornstarch
- 1 tsp Toasted Sesame Oil
For Rest of the Dish
- 1 lb Broccoli (cut into florets)
- 1 Medium Sweet Onion (Sliced)
- 2 Garlic Cloves (minced)
- 1 tbsp Ginger (peeled & minced, about a 1” section)
- Canola Oil (Avocado works too)
- Toasted Sesame Seeds
- Hoisin Sauce
- Hot Sauce (Sriracha Hot Chili Sauce)
- Salt & Pepper
- Fresh Lime Juice
Directions
Make the Marinade:
- Slice your goose breasts on an angle, into thin ¼” slices.
- In a bowl, combine the sliced goose, cornstarch, baking soda, salt and pepper. Mix well so meat is evenly coated.
- Then add the water, rice wine (or sherry) and oil. Mix well so everything combines.
- Set the goose aside to marinate for about 10 to 15 minutes as you prepare the rest of the ingredients. You can also let the goose marinate overnight.
Prepare Your Sauce:
- In a bowl, add all the ingredients for the sauce (soy sauce, water, sugar, cornstarch, and sesame oil). Mix until no more cornstarch clumps are visible. Set aside until needed.
Cook Your Goose & Broccoli:
- Bring a medium pot of water to a boil. Add the broccoli and boil them for 1-3 minutes. Once cooked, drain the broccoli and set aside.
- In a large cast iron pan over medium high heat, add enough oil to coat the bottom. Once the oil is hot, add the marinated goose and cook until it’s just cooked, about 2-4min, try not to overcook it. Cook in small batches if necessary and make sure to separate the goose so that each piece is evenly cooked. Remove from the pan and set aside.
- Remove excess oil and keep about 2 tablespoons of oil in the pan. Reduce the heat to medium. Add he Sliced Onion and cook for 3-5min, just until the onion starts to become translucent, but not soft.
- Add the minced garlic and ginger and sauté until fragrant, about 1min.
- Give the prepared stir fry sauce a good stir and add it to the sauteed onions, garlic and ginger. Add an extra 2 Cups of water and bring the sauce to a simmer while stirring frequently. Once the sauce has thickened and looks glossy, add the goose and the broccoli. Stir and toss everything together until the goose and the broccoli are well coated in sauce.
- Transfer into a bowl and garnish with sesame seeds, a squeeze of hoisin sauce and hot sauce and some fresh lime juice.
